    Ranch chicken casserole

    Here you’ll easily see the Spanish influence on American cooking, with the corn and peppers making a really colorful dish. Serve it with soft flatbreads and salad with ranch dressing.
    Serves 4
    2 tbsp oil
    1 onion, chopped
    2 garlic cloves, chopped
    750g/1¾lb chicken thighs, or use portions if you prefer
    1 red bell pepper, chopped
    2 tsp paprika
    1 tsp ground cumin
    1 bay leaf

    3 potatoes, peeled and sliced
    4 zucchini, sliced
    1 onion, chopped
    30g/1oz/2 tbsp butter
    2 tbsp all-purpose flour
    300ml/½pt/1¼ cups milk
    100g/4oz/1 cup freshly grated Parmesan cheese

    For the chicken wings
    50g/2oz/½ cup all-purpose flour
    1 tsp paprika
    Salt and freshly ground black pepper
    12 chicken wings
    Oil, for deep-frying
    50g/2oz/¼ cup butter
    4 tbsp hot chili sauce
    ½ tsp easy garlic or garlic powder
    For the cheese dip
    175ml/6fl oz/¾ cup heavy cream
    1 garlic clove, crushed
    100g/4oz cream cheese or blue cheese, crumbled
