2 cups freshly ground flour
½ cup rice milk or soy or almond milk
½ tsp cinnamon powder
½ tsp cumin powder
½ tsp coriander powder
1-2 Tbsp ghee or sesame oil
Mix ingredients gently to make a batter, not dough. It should be thick, not runny. Cook first side until bubbles form then turn to other side. Top with maple syrup or a little yogurt and honey.
Tips: Shred ½-1 cup carrots or 1-2 Tbsp ground split mung beans into the batter. Mix 2 tsp honey and 1 tsp tahini for an excellent topping. Add applesauce or cooked apples to the batter for more moisture and sweet taste. Remember- it is recommended to consume fruit separately from other foods such as vegetables, beans, and dairy.
