    Commercially produced eggs are coated with a mineral sealant to prevent bacterial penetration of the shell. This allows eggs to be stored longer. According to the USDA, uncooked eggs can be stored for three to five weeks in a refrigerator at 40° Fahrenheit. This assumes they have no cracks, are not kept on the refrigerator door, and haven’t been washed to remove the mineral coating. We regularly keep eggs as long as five weeks without any spoilage.
